Two Elephants and a Hill of Pebbles: Cos d'Estournel at Raffles Le Royal
A masterclass and dinner at Raffles Hotel Le Royal
Bordeaux and Southeast Asia, one would think, sit worlds apart, and yet, two centuries ago, a single Bordeaux estate looked east and never looked back, coming full circle to its present day partnership with Raffles, and its historic love of Southeast Asia showcased through its wines.

This month, we welcomed Mr. Alexis Thierriaz, Regional Director for Asia-Pacific at Château Cos d'Estournel and a familiar face of the château across Asia, to Raffles Hotel Le Royal for a masterclass and dinner celebrating the partnership between the two houses.
A Hill, a Maharajah and a Pagoda
Cos, pronounced "coss," comes from the old Gascon dialect for a hill of pebbles, as the vineyard lays on a rise above the Gironde estuary at the northern edge of the Médoc, where gravel has piled up into a hill. Then, an audacious wine merchant, Louis Gaspard d'Estournel (1762–1853) inherits the family land, buying up the land around the hill.
While most wineries sold to Bordeaux merchants, Louis himself decided to load his wines onto ships and sell them himself, a truly bonafide wine merchant. What had really set Louis apart was being the first to sell wines that traveled with him across the world, aging wonderfully while travelling across the seas, offered as “returned from India”. These very bottles earned him the moniker of ‘Maharajah of Saint-Estèphe’.
On his return, the memories of his travels in the East never left, where in the early 1800s, he built his winery to reflect his memories of his travels. Chinese-style pagoda roofs, a carved door from Zanzibar, the château painted pale-yellow and replacing the family emblem in turn for a predominant Elephant for the wine label.
Today, it is counted among Bordeaux's so-called Super Seconds, second growths that perform close to first-growth level.
What Lies Beneath
Dig down and you will find a vineyard built from ridges of gravel, laid out in regular rows and beautifully drained. Cos sits so close to Lafite that only a small stream, the Jalle du Breuil, divides them. Cabernet Sauvignon takes the poorest gravel at the crests and on the southern slopes, which lends it structure and tension. Merlot settles on the east-facing slopes and wherever the limestone bedrock breaks through, cooler ground that retains moisture and keeps the wine fresh, giving Merlot its flesh and depth. It is a generous share of Merlot for Saint-Estèphe, around 40 percent of the vineyard, though only about a fifth to a quarter of the grand vin. Add vines that average 55 years old, some past a hundred, and a gentle climate courtesy of the estuary and the Atlantic, and you get a house style that can be both firm and plush.
Two Elephants
Raffles knows this kind of story. It opened its Singapore flagship in 1887 and went on to help define luxury hospitality across Southeast Asia. Le Royal followed in 1929, and its Elephant Bar, with Charlie Chaplin among the early guests, has been the hotel's social heart ever since.
At Cos, meanwhile, the elephant is the estate's guardian. Louis Gaspard put elephants on his family coat of arms in place of the usual lion or tiger, and they stand for good fortune and the eastern influences he loved, turning up in the gardens, in the cellars and on the label of G d'Estournel. One elephant each, and a shared story of luxury travelling east.
It is a story Michel Reybier understands well. The French billionaire, who made his fortune in food before becoming a hotelier, has owned Cos d'Estournel since 2000, and the hospitality instinct shows: he turned Louis Gaspard's own home, Château Pomys, into a hotel, La Maison d'Estournel. He has also invested heavily in the winery itself, with a cellar built in the 2000s alongside the architect Jean-Michel Wilmotte, where 61 parcels are vinified separately across 72 vats and gravity does the work in place of pumps. In 2023, he added Château Cos Labory, the fifth growth next door, which Louis Gaspard once owned himself, and he plans to keep it independent. His holdings also include Goulée, a vineyard at the northern tip of the Médoc, now bottled as G d'Estournel.
Dinner in the Crystal Room
With the history behind us, the glasses did the rest of the talking. Four labels, one owner, climbing from fresh and easy to rich and serious.
The evening opened with the G d'Estournel 2021. The G stands for Goulée, the vineyard beside the Gironde estuary, tempered by the nearby Atlantic, and the wine carried that name until the 2019 vintage. It is the easiest way into the house, and the one poured by the glass at both Raffles hotels in Cambodia. Red berries, bright acidity and a saline, mineral finish, with no decanting needed: just uncork and pour.
The Warehouse Pairing Insight
Beside seared foie gras, that freshness did what good acidity should, cutting cleanly through the rich, buttery texture.
Then came Les Pagodes de Cos 2020, the château's second wine, built from the youngest vines, though the estate treats it as a grand vin in its own right. Darker than the Labory that followed, it moved from dark strawberry into ripe blackberry, bursting with cherry, with a whisper of licorice and not a sharp edge in sight. The tannins were firm but velvety, the freshness intact.
The Warehouse Pairing Insight
The pairing was a quiet triumph: a risotto of black truffle and porcini, its creaminess softening the wine further, while the earthy truffle and porcini met the tobacco and chocolate the oak had lent the glass.
The Château Cos Labory 2017 changed the mood. A fifth growth next door to Cos d'Estournel, it showed a more elegant, subtle face of Saint-Estèphe from a cool vintage: present but smooth tannins and a distinct note of dark strawberry. It is drinking beautifully now, with the structure to cellar for years. One footnote is worth knowing: this bottle predates the Reybier era. The Audoy family owned Cos Labory until 2023, and Cos d'Estournel's cellar master, Angélique Vigouroux, now oversees winemaking there.
The Warehouse Pairing Insight
With tender roast lamb, it was a gentle match that respected the fine tenderness of the meat.
Last came the grand vin, in two vintages thirteen years apart: the Château Cos d'Estournel 2017 and 2004, both cool years, and a rare chance to taste the same house at two ages. A strict final selection leaves only 250,000 to 380,000 bottles of it a year, depending on the vintage. The 2017 shares the dark, rich character of the Pagodes and lifts it into a more complete, perfectly integrated tier, with red and black fruits, pomegranate, spice and floral hints, firm, fine tannins and a subtle minerality. Powerful and concentrated.
The Warehouse Pairing Insight
The 2017 made a great echo of the Angus striploin and its rich bone marrow bordelaise. The 2004 showed what time does: a more evolved nose, the fruit stepping back for dark fruit, earth, black tea and balsamic notes, with melted, mature tannins and a bright acidity that still adds length.
Final Words
A hill of pebbles in Saint-Estèphe, a grand hotel in Phnom Penh and an elephant at each door: it was always going to be a natural fit. To everyone who joined us in the Crystal Room, and to Mr. Alexis Thierriaz for bringing the road from Bordeaux to Phnom Penh, one glass at a time, thank you.
