Under the Rain with Montes & Kaiken

A masterclass at Topaz and our first 'official' dinner at Kravanh

In September, we welcomed back a globetrotter from halfway across the world: Mr. Juan Yañez, Asia’s Export Manager for two very familiar brands, Montes from Chile, and Kaiken from Argentina. A regular visitor to Cambodia, the week officially kicked off at the local fine-dining restaurant, Topaz. We climbed it’s stairs into an urban oasis, surrounded by greenery and water, eventually settling into one of their private rooms. The room was cozy against the pitter patter of the rain, the city's gray cast sitting in stark contrast to the pure white and mahogany interior. With Bordeaux-red curtains drawn and the bottles aligned across the table, the masterclass began.Montes and Kaiken Masterclass

Montes: The Vision of Four Men

History

In 1987, Chile was primarily known for mass-producing cheap wine. Winemaker Aurelio Montes was obsessed with changing that reputation by crafting premium, export-quality bottles. After years of clashing with bosses who refused to back his push for quality, he struck out on his own, partnering with Douglas Murray (marketing), Alfredo Vidaurre (finance), and Pedro Grand (vineyards).

The beginnings were incredibly humble. Aurelio left a steady job with a family to feed; there were no outside investors and no family fortunes to lean on. Renting facilities and buying grapes under the original name "Discover Wine," they eventually broke through. Their Montes Alpha Cabernet Sauvignon put them on the map, with the 1987 vintage widely considered the first premium wine exported from Chile. By 1996, they launched their flagship Alpha M, a formidable Bordeaux-style blend from Apalta. Today, both these wines among many others now are sold within our very own stores!

The Vineyards

Protected by nature, Montes sits in the center of Chile, hemmed in by massive natural barriers: glaciers to the south, the Atacama Desert to the north, the Andes to the east, and the Pacific Ocean to the west.

This extreme geography is a winemaker's dream. The isolation has kept the vineyards entirely free of phylloxera (the pest that decimated 19th-century European vineyards) and Pierce's disease, allowing the vines to grow on their own original rootstocks. Combine that with very little summer rain and the cooling coastal winds regulating the intense daytime sun, and the grapes ripen perfectly while retaining their fresh acidity.

Marchigüe vs. Apalta

The winery draws heavily from two distinct terroirs. Marchigüe is the wilder of the two. Sitting on flatter land just 25 kilometers from the Pacific, it gets battered by coastal winds. To survive, the grapes develop thicker skins, resulting in highly concentrated, powerful wines like the rare Taita Cabernet Sauvignon.

Apalta, translating to "poor soils," is more sheltered and gentle, but do not let the translation fool you. As due to the poor soils, the grapevines must penetrate even further past granite and clay layers for nutrients and water, producing low yield, yet intensely concentrated and high quality grapes. True to it’s nature, this is the birthplace of Montes' icon wines, including Purple Angel, a Carménère dominant blend that has become one of the winery's most famous bottles.

Built in 2004 on feng shui principles, the Apalta winery operates entirely by gravity rather than mechanical pumps. Inside the barrel room, Gregorian chants play 24/7, a practice inspired by Japanese studies on how sound and vibration impact liquids as they age.

With Montes firmly established as a pioneer of Chilean wine, Aurelio Montes Sr. found his gaze wandering eastward. Much like the native Caiquén, a wild Patagonian goose known for freely flying back and forth across the snow-capped Andes, Aurelio made the trek across the mountains in 2001 to see what he could achieve on Argentine soil. That journey laid the foundation for the family's next chapter.

Kaiken: Argentina from the Heights

Kaiken is Montes' Argentine sibling, born from a desire to blend Chilean winemaking discipline with Argentina's exceptional terroir.

Operating out of a historic 1920s building in Vistalba, Luján de Cuyo, Kaiken’s vineyards stretch across Mendoza's most premium sub-regions, from Agrelo to the Uco Valley, and even up to Cafayate in Salta. Unlike the coastal valleys of Chile, Mendoza is essentially a high-altitude desert irrigated by pure Andean snowmelt.

Here, vineyards sit at extreme elevations ranging from 950 to 1,250 meters (3,100 to 4,100 feet). This altitude exposes the grapes to intense UV sunlight, thickening the skins for incredibly deep color and rich tannin. At the same time, the drastic temperature drops during freezing mountain nights lock in the grapes' natural acidity, keeping the wines vibrant and fresh.

Argentina is a cultural melting pot built around large family gatherings, the asado (grill), and the soccer pitch. Kaiken's portfolio reflects this bold, convivial energy. Their flagship is Mai, meaning "first" in the indigenous Pehuenche language, a powerful Malbec sourced from 100-year-old vines. The range also includes Disobedience, a rugged red blend crafted in collaboration with legendary open-fire chef Francis Mallmann. These are indeed wines built for a crowded, joyful table. And the wine world has taken notice of that evolution: Kaiken was recently named the New World Producer of the Year at the 2024 Sommelier Wine Awards, cementing its reputation far beyond the Andes.

Dinner Under the Rain at Kravanh

The rain stayed with us for our first 'official' pairing dinner with Kravanh on Wednesday, hosting a fully booked room, matching premium Khmer cuisine against some of the best bottles the two wineries have to offer.

The Pairing Menu

The Aperitif: Montes Sauvignon Blanc. Clear, crisp, and refreshing, a perfect palate cleanser to set the stage.

First Course: Kaiken Nude Rosé. A minimalist, alluring blend of Cabernet Sauvignon and Grenache. It tackled two complex dishes: a delicate parcel of crab, pork, and dried shrimp fried in golden tofu skin with a peach reduction, followed by ribbons of prized Cambodian turmeric mango dressed in tamarind, satay sauce, and fresh mint.

Second Course: Kaiken Ultra Chardonnay 2023. The wine's weight and subtle oak paired beautifully with a pan-fried cassava, crab, and pork patty sitting in a lightly salted, sweet coconut cream sauce.

Third Course: Kaiken Disobedience 2020. The Francis Mallmann collaboration met its match with a succulent, pan-seared duck breast served alongside sautéed shiitake mushrooms and cut by a sharp preserved lime and Kampot pepper reduction.

Fourth Course: Beef Saraman Curry. A slow-cooked, deeply rich coconut curry with local beef. To match this Kravanh staple, we poured two heavyweights side-by-side: the Kaiken Luxury Edition 2020 (a complex Uco Valley blend) and the Montes Alpha M 2020 (the flagship Apalta Bordeaux blend). Tasting both sides of the Andes against the savory weight of the curry was the highlight of the evening.

Dessert: A traditional Khmer sweet, finished perfectly with a pour of Sampan rum.

Thursday at the Garden & Terrace Lounge

Thursday shifted into a much more relaxed gear. Setting up at the new Garden & Terrace Lounge near The Wild, the evening transitioned into a laid-back, free-flow affair.

The pour list highlighted the highly approachable, everyday-drinking side of both portfolios: the iconic Montes Alpha Cabernet Sauvignon, the signature Kaiken Aventura Malbec, the creamy and tropical Montes Classic Chardonnay, and the crisp Kaiken Sauvignon Blanc.

A steady rotation of tailored canapés made the rounds all evening. As the night wore on, the open garden setting, excellent music, and the easy flow of wine provided a perfect, casual contrast to the formality of the masterclass and dinner.

To everyone who braved the weather to join us this week, thank you. We look forward to serving you again soon.
