Graves, meaning "gravelly soil," is the region that gave Bordeaux its name. This wine is the pure taste of that earth: structured, complex, and deeply satisfying. Haut-Selve delivers the classic balance of rich Merlot and firm Cabernet Sauvignon, built for savoring, but smooth enough to enjoy tonight. It is Bordeaux without the demanding formality.
Color: A deep, vibrant garnet that holds a dark core.
Aroma: A classic and inviting bouquet of crushed blackcurrant, dark cherry, and a subtle, smoky cedar note. Look for hints of damp earth and cocoa emerging as the wine breathes.
Palate: Medium to full-bodied, opening with silky tannins that provide structure without harshness. The flavor is generous, focused on ripe plum and black fruit, leading to a long, clean, and mineral-driven finish.
This wine's earthy structure and gentle tannins make it an incredible partner for rich meats and robust flavors.
Pairing: Perfect for a Cambodian-style Beef Lok Lak, where the cracked black pepper and rich sauce are lifted by the wine’s firm structure. It is also sublime with a simple grilled ribeye or hard European cheeses.
Serving: Decant for 30 minutes and enjoy during a slow, candlelight dinner.
