This single-vineyard Cabernet Sauvignon comes from the Tournon project, Michel Chapoutier's outpost in the Pyrenees region of Victoria, Australia. The Shay's Flat vineyard is known for its Cambrian soils, which lend a unique mineral character to the wine. This is an elegant and restrained style of Australian Cabernet, aged in French oak.
