This special cuvée from Pascal Jolivet, 'Indigène', is crafted from 100% Sauvignon Blanc grown on pure flint (silex) soils in Pouilly-Fumé. The name reflects the winemaking process, which relies solely on native, indigenous yeasts for fermentation. This minimalist approach, combined with aging on fine lees in stainless steel, results in a wine that purely expresses its terroir. It offers intense aromas of citrus, white flowers, and characteristic gunflint minerality. The palate is precise and powerful, with a driving acidity and a long, saline finish.
