This wine is the ultimate expression of the high, cool slopes of the Eden Valley. For over 170 years, the estate has championed Riesling, delivering a benchmark style celebrated for its pure, electric acidity. Hailing from the high, cool slopes of the Eden Valley, this wine is bone-dry and laser-focused, delivering an intense, age-worthy experience. It is a benchmark for refreshment, starting its life crisp and floral, then evolving over time into something richer and more complex.
Color: A pale, luminous straw with bright green flashes.
Aroma: An immediate, intense lift of freshly squeezed lime, green apple, and white flowers (like jasmine). As the wine sits, a subtle, complex note of wet slate and citrus zest emerges, hinting at its potential for age.
Palate: Crisp, taught, and exhilaratingly dry. The flavor profile is dominated by a core of vibrant lime juice and mineral tension that makes the mouth water. Its lightweight body carries a concentrated flavor that snaps cleanly to a very long, high-acid finish.
The intense, cleansing acidity of this Riesling makes it the ultimate partner for richer, spicier, or oilier foods, acting as a refreshing palate cleanser.
Pairing: An exceptional match for authentic Khmer Fish Amok, where the lime notes complement the fresh aromatics, or with spicy Thai Green Curry. It is also magnificent with rich, salty foods like Crispy Pork Belly or Salt and Pepper Squid.
Serving: Serve very cold (6–8°C) to highlight the refreshing acidity. This wine can be enjoyed now for its primary freshness or cellared for five years or more to develop its signature notes of toast and honey.
